In a large skillet, heat 3 tablespoons of cooking oil over medium heat. Pour in 1/4 cup of the egg mixture and cook for about 2-3 minutes, or until the edges start to set. Carefully flip the pancake and cook for another 2-3 minutes until golden brown. Repeat with the remaining mixture, adding more oil as needed.
