    Prepare the Chicken

    Cut the boneless chicken breast into bite-sized pieces and season with salt and black pepper.

    Slice the bell pepper, carrot, and onion into thin strips. Mince the garlic and set all the vegetables aside.

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chicken pieces and stir-fry until they are cooked through and lightly browned, about 5-7 minutes. Remove the chicken and set aside.

    In a small bowl, mix the soy sauce, oyster sauce, cornstarch, and water. Stir until combined and the cornstarch is dissolved.

    Return the cooked chicken to the skillet with the stir-fried vegetables. Pour the sauce over the mixture and stir well to coat everything. Cook for an additional 2-3 minutes until the sauce thickens slightly.
