Marinating the Chicken

Prepare the Marinade
In a medium bowl, mix together soy sauce, brown sugar, sesame oil, gochujang, minced garlic, grated ginger, chopped green onions, and black pepper until well combined.

Marinate the Chicken
In a large bowl, add the boneless chicken thighs. Pour the marinade over the chicken and ensure all pieces are well coated. Cover the bowl with plastic wrap and refrigerate for at least 1 hour, preferably overnight for best flavor.
Cooking the Chicken

Grill or Sauté
Preheat a grill or a skillet over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Grill the chicken for about 6-7 minutes on each side, or until fully cooked through and nicely charred. If using a skillet, sauté the chicken pieces for about the same time, ensuring they are cooked through.

Once cooked, remove the chicken from the heat and let it rest for 5 minutes before slicing.

Serve the sliced chicken bulgogi over steamed rice, garnished with sesame seeds. Provide lettuce leaves on the side for wrapping.
