    Marinate the Beef

    In a bowl, combine the soy sauce, olive oil, black pepper, and salt. Add the beef sirloin, making sure it is well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

    While the beef is marinating, slice the fresh mushrooms, onion, and mince the garlic. Set aside.

    Cook the Beef

    In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat. Remove the beef from the marinade (reserve the marinade for later) and sear the beef in the hot skillet for about 3-4 minutes on each side until browned. Remove from the skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onions and minced garlic, sautéing for 2-3 minutes until the onions are translucent. Then add the sliced mushrooms and cook for another 5-7 minutes until they are tender.

    Return the beef to the skillet with the sautéed vegetables. Add the reserved marinade and beef broth. Bring to a boil, then reduce the heat and let it simmer for about 10 minutes, allowing the flavors to meld.

    In a small bowl, mix the cornstarch with the water to create a slurry. Stir the slurry into the simmering beef and mushroom mixture. Cook for an additional 2-3 minutes until the sauce thickens.

    Once thickened, sprinkle the chopped fresh parsley over the dish and serve hot with rice or noodles.
