Prepare the Beef Mixture
In a mixing bowl, combine the ground beef, chopped green onions, bean sprouts, soy sauce, and sesame oil. Mix thoroughly until the ingredients are well incorporated.

Make the Sauce
In a small bowl, whisk together the soy sauce, cornstarch, water, and sugar until the cornstarch is dissolved and the mixture is smooth.

Cook the Beef Mixture
Heat 2 tablespoons of vegetable oil in a large non-stick frying pan over medium heat. Add the beef mixture and cook for about 5-6 minutes, stirring occasionally, until the beef is fully cooked and browned. Remove from the pan and set aside.

Cook the Egg Foo Young Patties
In the same pan, add another tablespoon of vegetable oil. Pour about 1/4 cup of the beaten eggs into the pan to form a patty. Add a portion of the cooked beef mixture on top of the egg, then pour a little more egg over it to cover. Cook for about 2-3 minutes on each side until golden brown. Repeat with the remaining egg and beef mixture.

In the same pan used for the patties, add the prepared sauce and bring to a gentle boil, stirring until the sauce thickens slightly.
