    Prepare the Beef

    Thinly slice the beef sirloin against the grain and set aside.

    Chop the Vegetables

    Slice the bell peppers, onion, and celery. Julienne the carrots. Mince the garlic and grate the ginger.

    Stir-fry the Beef

    In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the sliced beef and stir-fry for 3-4 minutes until browned. Remove the beef and set aside.

    Cook the Vegetables

    In the same wok, add a little more oil if necessary, and add the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Add the sliced onions, bell peppers, celery, and carrots. Stir-fry for 5-7 minutes until the vegetables are tender-crisp.

    Combine Ingredients

    Return the beef to the wok with the vegetables. In a small bowl, mix the soy sauce, beef broth, cornstarch, sesame oil, and black pepper. Pour this sauce over the beef and vegetables.

    Stir well to combine and cook for an additional 3-5 minutes until the sauce thickens and coats the beef and vegetables. Add the bean sprouts and cook for another minute.
