Make the Marinade
In a large bowl, combine soy sauce, honey, minced garlic, grated ginger, and black pepper. Whisk together until well combined to create the marinade.

Marinate the Pork
Place the pork shoulder or ribs into a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Grill the Pork
Remove the pork from the marinade, allowing excess marinade to drip off. Place the pork on the grill and cook for about 20-25 minutes for pork shoulder or 15-20 minutes for ribs, turning occasionally, until the internal temperature reaches at least 145°F (63°C).

Baste with Remaining Marinade
During the last 5 minutes of grilling, brush the pork with the remaining marinade for added flavor and moisture.

Once cooked, remove the pork from the grill and let it rest for 5-10 minutes before slicing or serving. This helps retain the juices.
