Prepare the Chicken
Rinse the chicken breasts under cold water and pat them dry with paper towels. Season both sides with salt and black pepper.

Bread the Chicken
Dredge each chicken breast in flour, shaking off the excess. Dip into the beaten eggs, allowing excess to drip off, then coat with breadcrumbs. Press the breadcrumbs onto the chicken to ensure they stick.

Heat the Oil
In a large skillet, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully place the breaded chicken breasts in the hot oil. Fry for about 5-7 minutes on each side, or until golden brown and cooked through. Remove and drain on paper towels.

Toast the Almonds
In a dry skillet over medium heat, toast the almonds until they are golden and fragrant, about 5-7 minutes. Remove from heat and let them cool.

Add Chicken Broth
Pour in the chicken broth and bring it to a simmer.

Blend the Almonds
In a blender, combine the toasted almonds with the heavy cream. Blend until smooth.

Finish the Gravy
Add the almond mixture to the saucepan with the chicken broth. Stir in the soy sauce, salt, and black pepper. Mix well and bring back to a simmer.

Thicken the Gravy
In a small bowl, mix the cornstarch with water to create a slurry. Slowly add the slurry to the gravy while stirring continuously until it thickens.
