    Preheat the Oven

    Preheat your oven to 325°F (160°C).

    Mix the Pumpkin Base

    In a mixing bowl, whisk together the pumpkin puree, heavy cream, brown sugar, egg yolks, vanilla extract, pumpkin pie spice, and a pinch of salt until smooth.

    Prepare Ramekins

    Place ramekins in a baking dish. Pour the pumpkin mixture evenly into the ramekins.

    Bake the Brûlée

    Carefully pour hot water into the baking dish around the ramekins, creating a water bath. Bake for about 30-35 minutes or until the edges are set but the center is still slightly jiggly.

    Cool and Chill

    Remove the ramekins from the water bath and let them cool to room temperature. Once cooled, refrigerate for at least 2 hours.

    Brûlée the Tops

    Before serving, sprinkle a thin layer of granulated sugar over the top of each chilled pumpkin brûlée. Use a kitchen torch to melt the sugar until it forms a crispy caramelized layer.

    Garnish and Serve

    Top each brûlée with a tablespoon of pomegranate seeds for a pop of color and flavor. Serve immediately.
