    In a non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the seasonal vegetables and sauté until they are tender, about 5-7 minutes.

    Pour the egg mixture over the sautéed vegetables in the skillet. Cook on low heat until the edges start to set, then sprinkle cheese over the top. Cover and cook until the cheese is melted and the eggs are fully set, about 5 minutes.
