Prepare the Home Fries
In a large skillet, heat olive oil over medium heat. Add the diced potatoes, salt, pepper, and paprika. Cook, stirring occasionally until the potatoes are golden and crispy, about 15-20 minutes. Set aside.

Assemble the Sandwich
In a separate skillet, toast the sourdough bread slices until golden brown. Place a slice of toasted bread on a plate, top with a generous portion of shredded Cheshire pork, sprinkle with Gruyere cheese, and cover with another slice of toasted sourdough.

Place the fried egg on top of the assembled sandwich. Serve with the crispy home fries on the side.
