    Prepare the Home Fries

    In a large skillet, heat olive oil over medium heat. Add the diced potatoes, salt, pepper, and paprika. Cook, stirring occasionally until the potatoes are golden and crispy, about 15-20 minutes. Set aside.

    Assemble the Sandwich

    In a separate skillet, toast the sourdough bread slices until golden brown. Place a slice of toasted bread on a plate, top with a generous portion of shredded Cheshire pork, sprinkle with Gruyere cheese, and cover with another slice of toasted sourdough.

    Fry the Eggs

    In the same skillet used for the bread, crack the eggs and fry them sunny-side up or to your preference. Season with salt and pepper.
