Marinate the Chicken
In a large bowl, combine the chicken thighs and buttermilk. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Breading
In another bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

Bread the Chicken
Remove the chicken from the buttermilk, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring it is fully coated. Shake off any excess flour.

Fry the Chicken
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until hot. Carefully add the breaded chicken thighs and fry for about 6-8 minutes on each side, or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Assemble the Sandwich
Spread a generous amount of mayonnaise on the bottom half of each potato bun. Place a fried chicken thigh on top, followed by a dollop of pimento cheese, a lettuce leaf, tomato slices, house-made pickles, and finally, the top half of the bun.
