    Prepare the Crust

    Preheat your oven to 350°F (175°C). Roll out your pie crust and fit it into a 9-inch pie dish. Prick the bottom with a fork and blind bake for 10-12 minutes until lightly golden. Remove from oven and set aside.

    In a saucepan, combine the heavy cream and bay leaves. Heat over medium heat until just simmering. Remove from heat, cover, and let it steep for 15 minutes.

    In a mixing bowl, whisk together the lemon juice, sugar, eggs, and a pinch of salt until well combined. Remove the bay leaves from the cream and slowly whisk the infused cream into the egg mixture, followed by the vanilla extract.

    Pour the filling into the pre-baked pie crust. Bake in the preheated oven for 30-35 minutes, or until the filling is set and slightly golden on top.
