Braise the Greens
Pour in the vegetable broth, add salt and black pepper. Bring to a simmer, cover, and braise for about 30 minutes, or until the greens are tender.

Make the Cole Slaw
In a bowl, combine the shredded cabbage and carrots. In a separate small bowl, mix the mayonnaise and apple cider vinegar. Pour the dressing over the cabbage mixture and toss to combine. Season with salt and pepper to taste.

Toast the Bread
While the collards are braising, toast the sourdough bread slices until golden brown.

Assemble the Collard Melt
On each slice of toasted sourdough, layer the braised collard greens, followed by a generous sprinkle of melted Gruyere cheese. Place under the broiler for 1-2 minutes until the cheese is bubbly.

Top each Collard Melt with a scoop of cole slaw and serve immediately.
