    Prepare the Coffee Base

    In a saucepan, combine the brewed coffee and heavy cream. Heat over medium heat until just simmering.

    Mix the Egg Yolks

    In a mixing bowl, whisk together the egg yolks, brown sugar, vanilla extract, ground cinnamon, and ground nutmeg until smooth.

    Combine Mixtures

    Slowly pour the hot coffee mixture into the egg yolk mixture, whisking constantly to temper the eggs. Strain through a fine mesh sieve into ramekins.

    Bake the Custard

    Place the ramekins in a baking dish and fill the dish with hot water halfway up the sides of the ramekins. Bake at 325°F (160°C) for 30-35 minutes or until set.

    Chill

    Remove from the water bath and let cool. Refrigerate for at least 2 hours until fully chilled.

    Caramelize the Top

    Sprinkle a thin layer of granulated sugar over each custard. Use a kitchen torch to caramelize the sugar until golden and crisp.

    Serve

    Garnish with pomegranate seeds before serving.
