Vegetable Stir-Fry

Method

Vegetable Stir-Fry

  1. 1

    Prepare the Ingredients

Wash and chop all vegetables: broccoli, bell pepper, carrots, and snow peas. Mince the garlic.

  2. 2

    Heat the Oil

In a large skillet or wok, heat the olive oil over medium-high heat.

  3. 3

    Cook the Vegetables

Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the broccoli, bell pepper, carrots, and snow peas. Stir-fry for 5-7 minutes until vegetables are tender yet crisp.

  4. 4

    Add Flavorings

Pour in the soy sauce, and season with salt and black pepper. Stir well to combine.

  5. 5

    Serve

Sprinkle sesame seeds on top before serving. Enjoy immediately.

Quinoa Salad

  1. 6

    Cook the Quinoa

Rinse the quinoa under cold water. In a pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce heat and simmer for 15 minutes or until all water is absorbed. Let it cool.

  2. 7

    Prepare the Vegetables

While quinoa is cooking, dice the cucumber, halve the cherry tomatoes, and finely chop the red onion. Chop the fresh parsley.

  3. 8

    Mix the Salad

In a large bowl, combine the cooked quinoa, diced cucumber, cherry tomatoes, red onion, and feta cheese.

  4. 9

    Dress the Salad

In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour over the salad and toss to combine.

  5. 10

    Garnish and Serve

Garnish with chopped parsley and serve chilled or at room temperature.
