Prepare the Broth

    In a large pot, combine the vegetable broth and water. Bring to a simmer over medium heat.

    Stir in the soy sauce, rice vinegar, chili paste, sesame oil, and sugar. Allow the broth to simmer for 5 minutes.

Add Vegetables and Tofu

    Add the cubed tofu, sliced mushrooms, julienned carrot, chopped green onions, and bamboo shoots to the broth.

    Let the soup simmer for another 5-7 minutes, allowing the vegetables to soften.

Thicken the Soup

    In a small bowl, mix the cornstarch with 2 tablespoons of water to create a slurry.

    Slowly pour the cornstarch slurry into the simmering soup while stirring continuously until the soup thickens slightly.

Serve

    Taste the soup and adjust seasoning if necessary. You can add more soy sauce or chili paste for extra flavor.

    Ladle the hot & sour soup into bowls and serve immediately, garnished with additional chopped green onions if desired.
