Method

Pork Preparation

  1. 1

    Marinate the Pork

In a small bowl, mix olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub the mixture all over the pork tenderloin. Let it marinate for at least 30 minutes, preferably overnight in the refrigerator.

  2. 2

    Sear the Pork

Preheat your oven to 200°C (400°F). Heat a skillet over medium-high heat. Add the marinated pork tenderloin and sear it for about 3-4 minutes on each side until browned.

  3. 3

    Cook the Pork

Transfer the seared pork to a baking dish and roast in the preheated oven for 20-25 minutes, or until it reaches an internal temperature of 63°C (145°F).

Sauce Preparation

  1. 4

    Prepare the Sauce

In the same skillet used for searing the pork, pour in the chicken broth and scrape any browned bits from the bottom. Bring to a simmer.

  2. 5

    Add Cream and Mustard

Stir in the heavy cream, Dijon mustard, and honey. Mix well and let it simmer for 5-7 minutes until the sauce thickens slightly.

Serving

  1. 6

    Slice and Serve

Once the pork is cooked, let it rest for 5 minutes before slicing. Serve with the sauce drizzled over the top.
