Scoop Ice Cream
Using an ice cream scoop, portion out the vanilla ice cream into 8 balls. Place them on a baking sheet lined with parchment paper.

Freeze Ice Cream
Cover the ice cream balls with plastic wrap and place them in the freezer for at least 2 hours, or until very firm.

Prepare Cornflake Coating
In a blender or food processor, pulse the cornflakes until finely crushed. Transfer to a bowl.

Heat Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry Ice Cream Balls
Carefully add the coated ice cream balls to the hot oil in batches, frying for about 15-20 seconds or until golden brown. Remove with a slotted spoon and drain on paper towels.
Serving

Plate and Serve
Place the fried ice cream balls on dessert plates. Drizzle with chocolate sauce, add a dollop of whipped cream, and top with cherries if desired. Serve immediately.
