Chicken Marinade Preparation

    Marinate the Chicken

    In a medium bowl, combine the soy sauce, cornstarch, egg, and salt. Add the chicken breasts cut into bite-sized pieces and mix well. Let the chicken marinate for at least 30 minutes.

Battering and Frying

    Prepare the Batter

    In a separate bowl, place the all-purpose flour. Remove the chicken from the marinade, allowing excess marinade to drip off, and coat each piece in flour.

    Fry the Chicken

    Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, carefully add the coated chicken pieces in batches, frying until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.

Sauce Preparation

    Make the Sauce

    In a saucepan, combine the soy sauce, rice vinegar, brown sugar, sesame oil, minced garlic, minced ginger, and red pepper flakes. Bring to a simmer and cook for 2-3 minutes.

    Thicken the Sauce

    In a small bowl, mix the cornstarch and water to create a slurry. Add this to the saucepan and stir until the sauce thickens, about 1-2 minutes. Remove from heat.

Assembly and Garnishing

    In a large mixing bowl, toss the fried chicken pieces with the prepared sauce until well coated.
