Preparation

    Sauté the Aromatics

    In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped onion, and sauté until the onion is translucent.

    Add the Rice

    Stir in the Arborio rice and cook for about 1-2 minutes until the rice is slightly toasted.

    Deglaze with Wine

    Pour in the white wine and stir until it is mostly absorbed by the rice.

    Add Marinara and Stock

    Add the marinara sauce and fish stock to the pot. Bring to a gentle simmer.

    Cook the Seafood

    Once the rice is halfway cooked (about 10-12 minutes), add the baby shrimp, clams, mussels, calamari, and bay scallops. Stir gently to combine.

    Finish Cooking

    Continue to simmer until the seafood is cooked through and the rice is creamy and al dente, about 5-7 more minutes. Season with salt and black pepper to taste.

    Garnish and Serve

    Remove from heat, stir in chopped parsley, and serve hot.
