    Prepare the Ingredients

    Preheat your oven to 375°F (190°C). Set up a breading station with a bowl for beaten eggs and a plate for bread crumbs.

    Breading the Eggplant

    Dip each slice of eggplant into the beaten eggs, then coat it with bread crumbs. Make sure each piece is fully coated.

    Fry the Eggplant

    In a large skillet, heat olive oil over medium heat. Fry the breaded eggplant slices until golden brown on both sides. Remove and let drain on paper towels.

    Layering

    In a baking dish, spread a layer of tomato sauce, place a layer of fried eggplant, sprinkle with mozzarella and Parmesan cheese, and repeat until all ingredients are used, finishing with cheese on top.

    Bake in the preheated oven for about 25-30 minutes, or until the cheese is bubbly and golden.

    Cook the Capellini

    While the Parmigiana is baking, cook the capellini according to package instructions. Drain and toss with a little olive oil, salt, and pepper.
