Prepare the Potatoes
Boil the potatoes in salted water until tender. Drain and let cool slightly, then peel.

Mash the peeled potatoes until smooth. In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms.

Shape the Gnocchi
Divide the dough into small portions. Roll each portion into a long rope about 1 cm thick, then cut into 2 cm pieces. Use a fork to create ridges on each piece.

Cook the Gnocchi
Bring a pot of salted water to a boil. Drop the gnocchi into the water in batches. They are done when they float to the surface, about 2-3 minutes.

Gently toss the cooked gnocchi in the sauce. Serve hot, garnished with fresh basil and grated cheese if desired.
