    In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes.

    Add Mushrooms and Bell Pepper

    Stir in the mushrooms and green bell pepper. Cook for an additional 5 minutes until softened.

    Add Garlic and Spices

    Add minced garlic, dried oregano, salt, and black pepper. Cook for 1-2 minutes until fragrant.

    Combine with Tomatoes

    Pour in the canned diced tomatoes (with juice) and stir to combine. Simmer for about 10 minutes, allowing the flavors to meld.

    Combine with Pasta

    Add the cooked penne pasta to the skillet and gently toss to combine with the sauce. Cook for an additional 2-3 minutes until heated through.
