Preparation and Baking

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Cook the Vegetables

    In a large skillet, heat a tablespoon of olive oil over medium heat. Add the zucchini, eggplant, yellow squash, mushrooms, and broccoli. Sauté until they are tender, about 5-7 minutes. Add the diced tomato and spinach, and cook until the spinach wilts. Season with salt and pepper to taste.

    Mix the Ricotta

    In a bowl, combine the ricotta cheese with a pinch of salt and pepper. Mix well until smooth.

    Assemble the Ziti

    In a large baking dish, layer half of the cooked pasta, followed by the sautéed vegetable mixture, then dollops of the ricotta cheese. Spread the remaining pasta on top, and pour the tomato sauce evenly over the top. Sprinkle the shredded mozzarella cheese over everything.

    Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

    Let the baked ziti sit for 5-10 minutes before serving. Enjoy!
