    Prepare the Ingredients

    Clean and slice the shiitake mushrooms, chop the sundried tomatoes, and finely dice the shallots.

    Toast the Pine Nuts

    In a dry skillet, toast the pine nuts over medium heat until golden brown, about 3-5 minutes. Set aside.

    Sauté the Vegetables

    In the same skillet, heat olive oil over medium heat. Add the shallots and sauté until translucent, about 3 minutes. Then add the shiitake mushrooms and cook until they are soft, about 5 minutes.

    Deglaze with Wine

    Pour in the white wine and let it simmer for 2-3 minutes, allowing the alcohol to evaporate.

    Add Sauces

    Stir in the pesto, heavy cream, and tomato sauce. Mix well and let it cook for another 5 minutes on low heat.

    Combine Everything

    Add the sundried tomatoes and toasted pine nuts to the sauce. Season with salt and black pepper to taste. Let it cook for an additional 2-3 minutes.

    Serve the Aurora sauce over your choice of pasta or as a topping for grilled chicken or vegetables. Enjoy!
