    Cook the Rice

    If you haven't done so already, cook the rice according to package instructions. Ideally, use leftover rice that has been refrigerated for a few hours or overnight for the best texture.

    Prepare the Vegetables

    Wash and cut the broccoli into small florets. Dice the carrots into small pieces. Slice the green onions thinly.

    Prepare the Sauce

    In a small bowl, mix together the soy sauce, sesame oil, minced garlic, and minced ginger. Set aside.

Cooking

    Heat the Pan

    In a large skillet or wok, heat the vegetable oil over medium-high heat.

    Sauté the Vegetables

    Add the broccoli florets, diced carrots, and frozen peas to the skillet. Sauté for about 5-7 minutes until the vegetables are tender and vibrant in color.

    Scramble the Eggs (if using)

    If you are using eggs, push the sautéed vegetables to one side of the skillet. Crack the eggs into the other side and scramble them until fully cooked. Mix them with the vegetables.

    Add the Rice

    Add the cooked rice to the skillet. Break up any clumps and stir to combine with the vegetables. Cook for another 3-4 minutes.

    Add Sauce and Season

    Pour the prepared sauce over the rice and vegetables. Stir well to coat everything evenly. Season with salt and black pepper to taste.

    Garnish and Serve

    Remove from heat and stir in the sliced green onions. Serve hot.
