    Cook the Noodles

    In a large pot of boiling water, cook the chow mein noodles according to package instructions until al dente. Drain and set aside.

    Prepare the Vegetables

    While the noodles are cooking, wash and chop all vegetables (bell pepper, carrot, broccoli, snap peas, green onion, and mushrooms) and set aside.

    Stir-Fry the Vegetables

    In a large skillet or wok, heat sesame oil over medium-high heat. Add garlic and ginger, sautéing for about 30 seconds until fragrant. Then, add the chopped vegetables (bell pepper, carrot, broccoli, snap peas, and mushrooms) and stir-fry for about 5-7 minutes until they are tender-crisp.

    Add the Noodles

    Add the cooked chow mein noodles to the skillet with the stir-fried vegetables. Toss well to combine.

    Make the Sauce

    In a small bowl, whisk together soy sauce, cornstarch mixed with water, and additional water. Pour the sauce over the noodle and vegetable mixture, stirring continuously until the sauce thickens, about 2-3 minutes.
