Boil the Noodles
Bring a pot of water to a boil, add the chow mein noodles and cook according to package instructions until al dente. Drain and set aside.

While the noodles are cooking, wash and chop all the vegetables as specified: julienne the carrots, cut the bell peppers into strips, separate the broccoli into florets, and slice the green onions.

In a small bowl, combine the soy sauce, oyster sauce, sesame oil, minced garlic, grated ginger, cornstarch, and water. Stir until the cornstarch is fully dissolved.

Heat a large skillet or wok over medium-high heat and add a splash of oil. Once hot, add the bell peppers, carrots, broccoli, snow peas, and green onions. Stir-fry for about 5-7 minutes, or until the vegetables are tender but still crisp.

Add the cooked chow mein noodles to the stir-fried vegetables. Pour the sauce over the top and toss everything together to ensure the noodles and vegetables are well coated in the sauce. Stir-fry for an additional 2-3 minutes.
