    Marinate the Shrimp

    In a bowl, combine the shrimp with salt and black pepper. Ensure that the shrimp is evenly coated with the seasoning. Set aside for about 15 minutes to marinate.

    Make the Szechuan Sauce

    In a separate bowl, whisk together soy sauce, rice vinegar, chili paste, sugar, sesame oil, cornstarch, and water until well combined. Set the sauce aside.

    Cook the Shrimp

    Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes, stirring frequently, until the shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

    Stir-Fry the Vegetables

    In the same skillet, add minced garlic and ginger. Stir-fry for about 30 seconds until fragrant. Then, add the sliced bell pepper and chopped green onions. Stir-fry for an additional 2-3 minutes until the vegetables are tender-crisp.

    Return the cooked shrimp to the skillet with the vegetables. Pour the Szechuan sauce over the shrimp and vegetables, stirring well to combine. Cook for another 2-3 minutes until the sauce thickens and coats the shrimp and vegetables.

    Remove from heat and serve the Szechuan shrimp hot over steamed rice or noodles. Garnish with additional chopped green onions if desired.
