Prep Work

Prepare the Pork Tenderloin
Trim any excess fat from the pork tenderloin and cut it into thin slices, about 1/2 inch thick. Set aside.

Prepare the Sauce
Mince the garlic cloves. In a medium bowl, combine the soy sauce, brown sugar, cornstarch, and water. Stir until the sugar and cornstarch are fully dissolved. Add the minced garlic and sesame oil, mixing well. Set aside.

Prepare the Green Onions
Chop the green onions into small pieces, separating the white parts from the green tops.

Sear the Pork
Heat the vegetable oil in a large skillet over medium-high heat. Add the sliced pork tenderloin in a single layer and sear for about 3-4 minutes on each side, until browned and cooked through. Remove the pork from the skillet and set it aside.

In the same skillet, reduce the heat to medium and add the white parts of the green onions. Sauté for 1-2 minutes until fragrant. Pour in the garlic sauce mixture and bring to a simmer, stirring constantly until the sauce thickens, about 2-3 minutes.

Transfer the pork with garlic sauce to a serving dish, garnish with the green tops of the chopped green onions, and serve hot over rice or noodles.
