Slice the pork tenderloin into thin strips. Season with salt and black pepper.

Dice the carrots and chop the green onions. Mince the garlic.

Cook the Pork
In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced pork and cook until browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and scramble until fully cooked. Remove the eggs and set aside with the pork.

Return the cooked pork and scrambled eggs to the skillet. Add the cooked rice, soy sauce, sesame oil, and chopped green onions. Stir well to combine and heat through for another 3-4 minutes.
