In a large bowl, combine the soy sauce, brown sugar, minced garlic, and grated ginger. Mix well and add the boneless chicken thighs. Make sure the chicken is well coated in the marinade. Cover and refrigerate for at least 30 minutes, preferably 2 hours for best flavor.

Heat the vegetable oil in a large skillet or wok over medium-high heat. Remove the chicken from the marinade (reserve the marinade) and add to the skillet.
