Preparation
- 1
Slice the Flank Steak
Trim any excess fat from the flank steak and slice it against the grain into thin strips, about 1/4 inch thick.
- 2
Prepare Marinade
In a bowl, combine the soy sauce, brown sugar, minced garlic (finely chop or press), and grated ginger. Mix well until the sugar is dissolved.
- 3
Marinate the Beef
Place the sliced flank steak into the marinade, cover, and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Cooking
- 4
Coat with Cornstarch
Remove the marinated beef from the refrigerator and sprinkle with cornstarch. Toss to coat evenly.
- 5
Heat Oil
In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

- 7
Make the Sauce
In the same skillet, add a bit more oil if needed, then stir in any remaining marinade. Bring to a simmer and let it thicken slightly for about 2-3 minutes.
- 8
Combine and Serve
Return the cooked beef to the skillet, tossing it in the sauce until fully coated. Add chopped green onions and stir to combine. Cook for an additional minute. Serve hot over steamed rice.
