Method

Preparation

  1. 1

    Prep the beef

Thinly slice the beef sirloin against the grain into bite-sized pieces. Season with salt and pepper to taste.

  2. 2

    Prepare the vegetables

Rinse the broccoli florets and slice the carrots into thin rounds. Mince the garlic and ginger.

Cooking

  1. 3

    Make the sauce

In a bowl, combine soy sauce, oyster sauce, cornstarch, beef broth, sesame oil, and sugar. Whisk until smooth and set aside.

  2. 4

    Cook the beef

In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Add the sliced beef and stir-fry for about 3-4 minutes, until browned. Remove the beef from the skillet and set aside.

  3. 5

    Stir-fry the vegetables

In the same skillet, add a bit more oil if needed, then add minced garlic and ginger, sautéing for about 30 seconds until fragrant. Add the broccoli and carrots, stir-frying for about 3-5 minutes until they are tender yet crisp.

  4. 6

    Combine and finish

Return the cooked beef to the skillet, pour the sauce over the mixture, and stir well. Cook for an additional 2-3 minutes until the sauce thickens and everything is well coated.
