Marinating the Chicken

Prepare the Marinade
In a bowl, combine the soy sauce, cornstarch, egg, and sesame oil. Mix well.

Marinate the Chicken
Cut the chicken thighs into bite-sized pieces and add to the marinade. Mix until all pieces are coated. Cover and refrigerate for at least 30 minutes.

In a separate bowl, combine the soy sauce, rice vinegar, sugar, hoisin sauce, chicken broth, cornstarch, and chili paste. Stir until the sugar and cornstarch are dissolved.

In a large skillet or wok, heat the vegetable oil over medium-high heat until it shimmers.

Remove the chicken from the marinade, letting excess drip off. Fry the chicken in the hot oil in batches until golden brown and cooked through, about 5-7 minutes. Remove and drain on paper towels.
