Prepare the Chicken

    Marinate the Chicken

    In a bowl, combine the boneless, skinless chicken breasts with soy sauce, cornstarch, and the egg. Mix well to ensure the chicken is evenly coated. Let it marinate for at least 30 minutes.

Make the Sweet and Sour Sauce

    Combine Ingredients

    In a saucepan, mix together ketchup, rice vinegar, brown sugar, soy sauce, pineapple juice, cornstarch, and water. Stir well to combine.

    Heat the Sauce

    Place the saucepan over medium heat and bring the mixture to a boil, stirring frequently. Once boiling, reduce heat and let it simmer for about 5 minutes until thickened.

Cook the Chicken and Vegetables

    Chop the bell pepper and onion into bite-sized pieces. Set aside.
