Wrapper Preparation

Make the Dough
In a mixing bowl, combine all-purpose flour and salt. Make a well in the center and add water and the egg. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.

Roll the Wrappers
After resting, divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin circle, approximately 6 inches in diameter.

Prepare the Filling
In a large skillet, heat 1 tablespoon of vegetable oil over medium heat. Add the cabbage, carrot, and green onions. Stir-fry for about 5-7 minutes until the vegetables are tender.

Season the Filling
Add soy sauce, salt, and pepper to the vegetable mixture. Stir well and cook for another 2 minutes. Remove from heat and let it cool slightly.
Assembly and Cooking

Fill the Wrappers
Place about 2 tablespoons of the filling on the lower half of each wrapper. Fold the sides over the filling, then roll it up tightly from the bottom to the top.

Prepare for Frying
Heat 2 cups of vegetable oil in a deep frying pan over medium-high heat until hot.

Fry the Egg Rolls
Carefully add the rolled egg rolls to the hot oil, a few at a time. Fry until golden brown and crispy, approximately 3-4 minutes on each side. Remove and drain on paper towels.
