Preparation
- 1
Prepare the Shrimp
Rinse the shrimp under cold water and pat dry with paper towels.
- 2
Mix the Sauce
In a small bowl, whisk together soy sauce, sesame oil, and cornstarch until smooth. Add water and mix well.
- 3
Chop the Vegetables
Slice the bell pepper into thin strips and chop green onions, setting aside the white part for cooking and the green part for garnish.
- 4
Prepare the Cashews
Roughly chop the cashews if they are whole.

Sauté the Aromatics
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add minced garlic and grated ginger, sautéing until fragrant, about 30 seconds.
- 6
Cook the Shrimp
Add the shrimp to the skillet and cook until they turn pink and are cooked through, about 3-4 minutes.
- 7
Add Vegetables
Stir in the sliced bell pepper and the white parts of the green onions. Cook for an additional 2 minutes until the vegetables are tender.
- 8
Combine with Sauce
Pour the prepared sauce over the shrimp and vegetables, stirring well to coat. Let it simmer for 2-3 minutes until the sauce thickens slightly.
- 9
Add Cashews
Stir in the chopped cashews and red pepper flakes (if using), allowing them to warm through for an additional minute.
Serving
- 10
Serve
Remove from heat and garnish with the green parts of the chopped green onions. Serve warm with lime wedges on the side, if desired.
