Prepare the Pork
Trim any excess fat from the pork tenderloin and cut it into bite-sized pieces.

Chop Vegetables
Dice the bell pepper and onion. Mince the garlic cloves. Slice the green onions, separating the white parts from the green parts.

Prepare Sauce
In a small bowl, mix together soy sauce, hoisin sauce, sesame oil, honey, cornstarch, and water. Stir until well combined and set aside.

Cook Pork
In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the pork pieces and season with salt and black pepper. Stir-fry until the pork is browned and cooked through, about 5-7 minutes. Remove the pork from the skillet and set aside.

In the same skillet, add a bit more oil if needed. Add the diced bell pepper, diced onion, and white parts of the green onions. Sauté for about 3-4 minutes until the vegetables are tender.

Return the cooked pork to the skillet. Pour the prepared sauce over the mixture and stir well to combine. Cook for an additional 2-3 minutes until the sauce thickens.
