Slice the bell pepper, carrot, and chop the green onions. Set aside the vegetables.

In a small bowl, combine soy sauce, chicken broth, cornstarch, sugar, and sesame oil. Stir until smooth and set aside.

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
