Method

Preparation

  1. 1

    Prepare the Chicken

Cut the boneless, skinless chicken breasts into bite-sized pieces. Season lightly with salt and pepper.

  2. 2

    Chop Vegetables

Slice the bell pepper, carrot, and chop the green onions. Set aside the vegetables.

  3. 3

    Prepare the Sauce

In a small bowl, combine soy sauce, chicken broth, cornstarch, sugar, and sesame oil. Stir until smooth and set aside.

Cooking

  1. 4

    Cook the Chicken

In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

  2. 5

    Stir-fry Vegetables

In the same skillet, add another tablespoon of vegetable oil. Add minced garlic and ginger, stir-frying for about 30 seconds until fragrant. Then add the sliced bell pepper, broccoli florets, and carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

  3. 6

    Combine Everything

Return the cooked chicken to the skillet with the vegetables. Pour the prepared sauce over the chicken and vegetables. Stir well to combine. Cook for an additional 2-3 minutes, letting the sauce thicken and coat all the ingredients.

  4. 7

    Add Cashews and Serve

Finally, stir in the raw cashews and chopped green onions. Cook for another minute. Serve hot over rice or noodles.
