Preparation and Assembly

    Prepare the Seafood

    In a mixing bowl, combine the flour, cornmeal, Cajun seasoning, salt, and black pepper. In another bowl, whisk together the eggs and buttermilk. Dip the shrimp, fish, or crawfish in the wet mixture, then dredge in the flour mixture until fully coated.

    Fry the Seafood

    Heat vegetable oil in a deep skillet or fryer to 350°F (175°C). Fry the coated seafood in batches for 3-4 minutes or until golden brown. Remove and drain on paper towels.

    Prepare the Po-Boy

    Slice the French bread lengthwise. Layer the fried seafood on the bottom half of the bread. Top with shredded lettuce, sliced tomatoes, pickles, and onions.

    Add Sauce and Serve

    Drizzle your choice of cocktail sauce or tartar sauce over the top and close the sandwich. Cut in half and serve immediately.
