Prepare the Fish
Pat the fish fillets dry with paper towels. Rub cajun seasoning evenly on both sides of the fillets.

Blacken the Fish
In a large skillet, heat olive oil and butter over medium-high heat. Once hot, add the seasoned fish fillets. Cook for about 3-4 minutes on each side until blackened and cooked through. Remove from skillet and keep warm.

Finish the Sauce
Add green onions, heavy cream, lemon juice, salt, and black pepper to the skillet. Stir well and simmer for about 5 minutes until the sauce thickens slightly.

Serve
Place the blackened fish on a plate and generously spoon the crawfish julee sauce over the top. Serve with your choice of two additional sides.
