Prepare the Tomatoes
Slice the green tomatoes into 1/4-inch thick rounds. Sprinkle both sides with salt and let them sit for about 10 minutes to draw out moisture.

Set Up Breading Station
In one bowl, mix the cornmeal, flour, black pepper, and cayenne pepper. In another bowl, whisk the buttermilk and eggs together.

Coat the Tomatoes
Dredge each tomato slice first in the buttermilk mixture, then coat it with the cornmeal mixture. Press gently to ensure the coating sticks.

Fry the Tomatoes
In a large skillet, heat the vegetable oil over medium-high heat. Fry the coated tomato slices in batches for about 3-4 minutes on each side, or until golden brown. Drain on paper towels.

Serve the fried green tomatoes hot, drizzled with Crawfish Julee Sauce.
