Prepare Sushi Rice

Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to rice cooker instructions or bring to a boil, then cover and simmer for 18-20 minutes. Once cooked, let it sit for 10 minutes, then fluff with a fork.

Season Rice

In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm sushi rice and let it cool.

Prepare Spicy Crab Salad

In a bowl, combine the imitation crab meat, sriracha, and mayonnaise. Mix well to create the spicy crab salad.

Assemble the Roll

On a bamboo sushi mat, spread a layer of sushi rice evenly. Place slices of avocado and a layer of jumbo lump crab meat on top. Roll tightly using the mat, then transfer to a baking dish.

Top with Spicy Crab Salad

Spread the spicy crab salad evenly over the top of the rolled sushi.

Bake the Roll

Preheat the oven to 375°F (190°C). Bake the assembled roll for about 10-15 minutes, or until the topping is heated through and slightly golden.

Garnish and Serve

Remove from the oven and drizzle with spicy mayo and sushi sauce. Sprinkle tempura crunch and sliced green onions on top before serving.
