Preparation

  1. 1

    Prepare the Tomatoes

Preheat your wood-fired oven to around 500°F (260°C). Wash the Roma tomatoes thoroughly, then slice them in half lengthwise.

  2. 2

    Blend the Ingredients

In a blender or food processor, combine the halved tomatoes, chipotle peppers, garlic cloves, olive oil, salt, and black pepper. Blend until smooth.

Cooking

  1. 3

    Cook the Mixture

Pour the blended mixture into a cast-iron skillet and place it in the wood-fired oven. Cook for about 15-20 minutes, stirring occasionally, until the sauce thickens and the flavors meld.

  2. 4

    Finishing Touches

Remove the skillet from the oven. Stir in the fresh lime juice and chopped cilantro. Adjust seasoning with more salt and pepper if needed.

Serving

  1. 5

    Serve the Dish

Serve the wood-fired tomato chipotle warm, garnished with lime wedges and extra cilantro on top. Enjoy with tortilla chips, tacos, or as a sauce for grilled meats.
