Prepare Mahi Mahi
Pat the mahi mahi fillets dry with paper towels. Rub the blackening spice generously on both sides of the fillets.

Pickled Onion Slaw

Pickle the Onions
Thinly slice the red onion and place it in a bowl. In a separate bowl, whisk together apple cider vinegar, sugar, salt, and 1 cup of water. Pour the mixture over the onions and let them sit for at least 30 minutes.

Prepare Slaw
Shred the cabbage and carrot. After the onions are pickled, drain them and mix with the cabbage and carrot in a large bowl.
Grilled Pineapple Vinaigrette

Grill Pineapple
Preheat a grill or grill pan over medium heat. Cut the fresh pineapple into rings and grill for about 3-4 minutes on each side until caramelized. Remove from heat and chop into small pieces.

Make Vinaigrette
In a bowl, mix the chopped grilled pineapple, olive oil, honey, apple cider vinegar, salt, and black pepper. Whisk until well combined.

Assemble the Torta
Toast the brioche buns lightly on the grill. On the bottom half of each bun, place a handful of mixed greens, followed by a piece of blackened mahi mahi, a generous spoonful of pickled onion slaw, and a dollop of guacamole. Drizzle with grilled pineapple vinaigrette and top with the other half of the bun.

Serve
Serve the mahi tortas immediately with extra grilled pineapple vinaigrette on the side if desired.
