Mahi Mahi

    Prepare Mahi Mahi

    Pat the mahi mahi fillets dry with paper towels. Rub the blackening spice generously on both sides of the fillets.

    Cook Mahi Mahi

    Heat the olive oil in a skillet over medium-high heat. Once hot, add the fillets and cook for about 4-5 minutes on each side until blackened and cooked through. Remove from heat and set aside.

Pickled Onion Slaw

    Pickle the Onions

    Thinly slice the red onion and place it in a bowl. In a separate bowl, whisk together apple cider vinegar, sugar, salt, and 1 cup of water. Pour the mixture over the onions and let them sit for at least 30 minutes.

    Prepare Slaw

    Shred the cabbage and carrot. After the onions are pickled, drain them and mix with the cabbage and carrot in a large bowl.

Grilled Pineapple Vinaigrette

    Grill Pineapple

    Preheat a grill or grill pan over medium heat. Cut the fresh pineapple into rings and grill for about 3-4 minutes on each side until caramelized. Remove from heat and chop into small pieces.

    Make Vinaigrette

    In a bowl, mix the chopped grilled pineapple, olive oil, honey, apple cider vinegar, salt, and black pepper. Whisk until well combined.

Guacamole

    Prepare Avocados

    Cut the avocados in half, remove the pit, and scoop the flesh into a bowl. Mash the avocados with a fork.

    Mix in Ingredients

    Add lime juice, minced garlic, salt, diced tomato, and chopped cilantro to the mashed avocados. Mix well to combine.

Assembly

    Assemble the Torta

    Toast the brioche buns lightly on the grill. On the bottom half of each bun, place a handful of mixed greens, followed by a piece of blackened mahi mahi, a generous spoonful of pickled onion slaw, and a dollop of guacamole. Drizzle with grilled pineapple vinaigrette and top with the other half of the bun.

    Serve the mahi tortas immediately with extra grilled pineapple vinaigrette on the side if desired.
