Method
Burger Patty Preparation

Form the Patty
In a mixing bowl, combine the ground beef, salt, and black pepper. Mix gently and form into one 8 oz. patty. Make a slight indentation in the center to prevent puffing while cooking.

Grill the Patty
Preheat a wood grill to medium-high heat. Place the patty on the grill and cook for about 4-5 minutes on each side for medium doneness, or until desired doneness is reached.

Cook the Bacon
In a skillet over medium heat, cook the bacon strips until crispy. Remove and drain on paper towels.

Assemble the Burger
On the bottom half of the brioche bun, layer the cooked burger patty, crispy bacon, caramelized onions, shredded lettuce, sliced tomato, and a slice of pepper jack cheese. Top with the other half of the bun.
