Pork Carnitas Preparation

Prepare the Pork
In a slow cooker, place the pork shoulder. Add chopped onion, minced garlic, cumin, oregano, salt, and black pepper.

Add Juices
Pour orange juice and lime juice over the pork shoulder. Cover and cook on low for 8 hours or high for 4 hours until tender.

Shred the Pork
Once cooked, remove the pork from the slow cooker and shred it with two forks. Return the shredded pork to the cooker and mix well with the juices.

Prepare the Hoagie Rolls
Slice the South Union Bakery hoagie rolls lengthwise without cutting all the way through.

Layer Ingredients
Spread mustard on the inside of each roll. Add a generous amount of shredded pork carnitas, followed by a layer of sliced ham and Swiss cheese.

Add Pickles and Aioli
Top with pickles and drizzle lime aioli over the fillings.
