Preparation

1. Prepare the Pork

In a large pot, add the pork shoulder (or chicken) and cover it with chicken broth. Bring to a boil over medium-high heat.

2. Add Aromatics

Once boiling, reduce the heat to medium-low. Add the whole onion (peeled and quartered), crushed garlic cloves, dried oregano, cumin, chili powder, salt, and pepper. Stir to combine.

3. Simmer

Cover the pot and let it simmer for about 1.5 to 2 hours or until the meat is tender and easily shreds.

4. Add Hominy

Once the meat is cooked, remove it from the pot and shred it with two forks. Return the shredded meat to the pot and add the hominy. Simmer for an additional 30 minutes.

5. Prepare Toppings

While the posole is simmering, prepare the toppings. Thinly slice the radishes, shred the cabbage, cut lime into wedges, and dice the avocado.

6. Serve

Ladle the hot posole into bowls and serve with the prepared toppings on the side. Allow guests to customize their bowls with radishes, cabbage, lime, avocado, cilantro, and tortilla chips.
